Athens/campus landmark: Sanford Stadium, I know it’s basic but I’ve just had so many of my favorite memories there!
Memory while in school:
We had (what we thought) was a genius idea to go watch a meteor shower out on the UGA Golf Course while I was in school. Of course it was closed after dark so we climbed over the fence to witness the shooting stars in a dark, treeless elevated place. It was beautiful. On the way back over the fence the UGA police pulled up with lights and sirens blaring. My friends and I scattered but my responsible husband (boyfriend at the time) calmly explained to them that we hadn’t damaged any property and talked them into just giving us a warning. I won’t say who, but my roommate at the time hightailed it into the woods and I don’t think I’ve seen her move that fast to this day (hint: she’s also been featured in Georgia Girls).
Professor/class: Communication Law – Dr. Lee; It was so good it almost made me switch paths into law!
Gameday ritual/plan: Tailgate on Milledge and then head to the stadium (with maybe a nip of Fireball on the way)!
Tailgate Recipe: Love this one from @stephthesommolier (her substack is fabulous)! She pairs each recipe with a wine, and I’d say this one is a great match for the Kate Arnold Riesling (not too sweet!), available at Five Points Bottle!
Whipped Ricotta with Hot Honey and Pumpkin Seeds (4)
Ingredients:
1 cup smooth, full-fat Ricotta cheese*
1 cup Mascarpone
2 tsp fresh lemon juice
1/4 cup roasted, salted pumpkin seeds/pepitas**
Drizzle of extra-virgin olive oil
Drizzle of hot honey***
~ 2-3 tsp lemon zest
Sea salt to taste
Directions:
In a medium sized mixing bowl, add 1 cup of smooth, full-fat Ricotta cheese, 1 cup of Mascarpone, and 2 tsp fresh lemon juice. Blend with a hand-mixer at high speed to incorporate air into it to make it light and fluffy (AKA, whip it!)
Transfer to a flat-bottomed serving bowl and spread out along the bottom of the bowl. Drizzle with high quality extra-virgin olive oil, top with pumpkin seeds, drizzle with hot honey, and finish it off with some freshly grated lemon zest and sea salt to taste.
Enjoy with simple homemade crostini, fresh sourdough, or your favourite original salted chips or crackers! And of course, don’t forget the wine!
