SHARE A TAILGATE RECIPE:
Homemade Banana Pudding
To me it’s not an official tailgate without banana pudding. (Well technically without banana pudding, bourbon, and boiled peanuts, but I was only asked for one recipe :))
Ingredients
3/4 cup granulated sugar
1/4 cup cornstarch
1/4 teaspoon salt
6 large egg yolks
3 and 1/2 cups whole milk
2 Tbs diced butter
1 Tbs vanilla extract
Whipped Cream (homemade or otherwise)
Vanilla Wafers (crumbled*)
4 ripe bananas, sliced
*1 crumble the wafers so the banana pudding is easier to eat and you get wafer in each bite. When they are put it whole they always tend to make a mess.
Preparation
In a large saucepan, whisk together sugar, cornstarch, egg yolks and salt. Slowly whisk in milk making sure it doesn’t clump. Place saucepan over medium heat and bring to a simmer. Stir constantly until the pudding thickens, about 4-7 minutes. Remove from the heat and whisk in butter and vanilla until fully mixed. Let that chill overnight. The next day, assemble the pudding cups by layering a few vanilla wafer crumbles, then a little pudding, followed by a layer of bananas. Repeat the layers until you come to the top of the cup, then add a dollop of whipped cream and a few more wafer crumbles for good measure
